Cashew kernels are graded into different categories based on their size, shape, and color. The most popular grades of cashew kernels are W-180, W-210, W-240, W-320, and W-450. The W-180 and W-210 are larger and more expensive than other grades, while the W-320 is the most popular and widely available. Scorched wholes have a slightly brown color due to longer roasting and have the same nutritional value as white kernels. Butts, splits, and pieces are lower in price and are used for cooking, preparation of sweets, and savoury snacks.

Cashew kernels are graded based on their size, color/characteristics; count/454gms size description, maximum moisture %, maximum broken %, and Non-Liquid Impurities (NLSG). The specifications for the different grades vary, but all kernels should be free from infestation, insect damage, mould rancidity, adhering test, and objectionable extraneous matter. Scrapped and partially shrivelled kernels are also permitted as long as they do not affect the characteristic shape of the kernel.
